Chocolate Chip Cookies

Perfect chocolate chip cookies? I have discovered that everyone has there own preference when it comes to chocolate chip cookies. My dad is the biggest chocolate chip cookie critic I know, and he will be sure to tell you how much he loves his cookies to be thin. Me on the other hand, I would prefer a soft but thicker cookie. I like the way a thicker cookie looks and there's just something about being able to chew into a warm soft cookie. Chocolate chip cookies have been a process of trial and error for me, and I have come up with a wide variety of results. Some have turned out thinner than potato chips, while others could compare to rocks. Finally, after using a few different ingredients, I found a recipe that makes both appealing and soft/chewy chocolate chip cookies!

My friend Rachael introduced me to a cookie she made using cake flour. I could not believe how perfect this cookie was. It was soft, thick (but not too thick), chewy, and delicious. I decided to try out this cake flour recipe adding my own twist to it. Its always a little more fun to make it your own :) I remembered my mom's chocolate chip cookie recipe called for crisco instead of butter, and her recipe usually creates a nice thick cookie. The crisco contains less water than regular butter, so it keeps the cookies from flattening (sorry dad). I used a combination of butter and crisco so I could get a good balance between thin and thick.

Using the cake flour, a lower oven temperature, and a combination of butter and crisco, I was able to come up with a satisfactory recipe. This cookie is perfect for someone who wants a thick, but not too thick chocolate chip cookie. These are chewy on the inside and perfectly crinkled and browned on the outside. There is really a science to making cookies, and there is definitely a variety of shapes, colors, and tastes that come with each batch. With that being true, I don't believe a perfect chocolate chip cookie recipe exists. Everyone has there own preference when it comes to cookies, and this recipe just so happened to satisfy MY ideal cookie expectations. Even my flat cookie loving dad enjoyed this recipe, so I know it has a good balance for those picky cookie critics.

Chocolate Chip Cookies

Ingredients

1 stick of butter (room temp)

½ cup Crisco

¾ cup sugar

¾ cup brown sugar

1 tsp vanilla

2 eggs

2 ¾ cup cake flour

1 tsp baking soda

1 tsp salt

2 cups semi sweet chocolate chips

Directions

1. Preheat the oven to 350 degrees, and prepare baking sheets with parchment paper

2. Using a mixer, combine butter, Crisco, sugar, and brown sugar in a large bowl

3. Add in vanilla and both eggs

4. In a separate bowl, combine cake flour, baking soda, and salt.

5. Gradually add in the dry ingredients to the large bowl of wet ingredients

6. Fold in the chocolate chips and make Tbsp sized balls of dough and arrange on baking sheet.

7. Cook cookies for 9-10 minutes and enjoy.
